SEASONAL COOKING: HOT BREAKFAST GRAINS WITH FRESH HERBS AND KASHA

HOT BREAKFAST GRAINS WITH FRESH HERBS AND KASHA

SERVES 4

INGREDIENTS

1 cup uncooked hot cereal of your choice (I love Bob’s Red Mill Creamy Buckwheat Hot Cereal)

Pinch sea salt

1/4 cup kasha

1/4 cup toasted sesame seeds

Lemon juice, to taste

Chili oil and toasted sesame oil,

to taste
2 green onions, green and white

parts thinly sliced

1/4 cup chopped herbs of your choice (flat leaf parsley, cilantro, tarragon, basil)

INSTRUCTIONS

  1. In a medium pot, bring the cereal, salt, and 3 cups of water to a boil over high heat. Stir to make sure the grains aren’t sticking to the bottom of the pot, then lower the heat and simmer, covered, stirring occasionally.
  2. Cook for around 10 minutes until the grains have softened.
  3. Stir in the lemon juice then divide evenly among bowls. Top with the oils, kasha, sesame seeds, green onion, and herbs. Alternatively, invite each person to add their own toppings.
